This is how to make plain rice in the simplest way once you get the hang of all the steps (rinsing, simmering, fluffing and resting), you can make delicious variations.

  1. Pour rice into a bowl, and fill it with cold water. Swirl the grains, using your fingers. Tip out any starchy water, and repeat until the water runs clear. you may use a colander and rinse rice over running water.
  2. Combine rice and water in a pot. For long grain and medium grain rice, like Basmati:1 cup to 1 1/3cups of water.
  3. For short-grain rice:1 cup to 1 cup of water
  4. For brown rice:1 3/4 cups of water. The rice and water should not come more than halfway up the sides of the pot; the mixture will double in volume as it cooks.
  5. Bring water to a hard boil over medium-high heat. Give it a vigorous stir with a spatula making sure to scrape at any grains at the bottom of the pot. Cover it with a tight lid and the heat to low.
  6. Cook long grain and medium grain rice for 15 mins;short-grain varieties for 20 mins; and brown rice for 30 mins.
  7. Turn off the heat and let rice rest 10 to 15 mins before serving.
