This is a very basic beef wet fry. It’s easy, delicious and inexpensive to make. While there are hundreds of variations of this traditional recipe, it’s hard to improve on this version’s savory and comforting goodness.

  1. In a pot, add meat, salt, ginger garlic, and water altogether.
  2. Bring to a boil and simmer on very low heat for about 45 mins to 1 hour or until most of the water has evaporated.
  3. When the meat is soft and tender, remove any water that may be left and set it aside.
  4. To the meat in the pot, add some oil, onions, chili and fry until the onions turn slightly brown.
  5. Add the tomatoes, stir and fry on low heat. Cover for 10 mins or until the tomatoes are soft and crushed.
  6. Add the rest of the seasoning (beef cubes or preferably 1 tsp of tomato sauce, a tsp of flour and a pinch of black pepper) then add 1/2 cup of water and simmer on low heat for about 20 mins.
  7. Remove from heat when most of the water has evaporated and the broth is thick in texture.
  8. Finish by adding the dhania and serve when hot.
  9. Best enjoyed with ugali, mukimo or vegetables.
