Coconut sauce is a coastal sauce. If you love your dry foods with a bit of taste, get yourself a tamarind stock for this recipe, in Swahili Ukwaju. Have the sauce on soups to avoid dairy products, baked foods, smoothies, ice cream and also batters fish and meat.

  1. First, get the garlic cloves and whole red chillies and crush them to make a paste. You can use dry chillies.
  2. Add-in the other ingredients; coconut milk, turmeric powder, chilli powder, tamarind sauce, tomato paste and salt in a pan over low heat and stir together.
  3. Gently simmer as you stir constantly until the sauce thickens. Keep on stirring for a firm smooth paste of the coconut milk.
  4. Keep the heat to low with a continuous stir, when it is ready, add in the lemon juice then remove off the heat. Add in the parsley. Stir a few more minutes as it cools down, set aside.
