For this recipe, you will need to use a karai, which just means a shallow wide non-stick pan.

Add the dates, raisins, tutty fruity and cherries to a mixing bowl then pour the fresh juice in and soak for about 6 hours overnight.
Add the sugar, cardamom, cinnamon, and cloves into a separate mixing bowl and mix until it is a fine powder
Place the cashew, almonds, and pistachio in a small bowl and mix with a teaspoon of flour to prevent them from sinking to the bottom of the batter when baking.
Break the eggs and whisk as much as possible before sieving the fine powder of brown sugar, baking powder, baking soda, salt and the cup of all-purpose flour into the mixture and mix thoroughly until there are no lumps.
Add the melted butter and mix to make a smooth batter then add the soaked fruits and mix well then add the powdered cashew, almonds, and pistachio and mix again. Go in with some vanilla essence as you continue to mix.
Grease the baking pan and place the parchment paper before pouring the batter in and tapping gently to remove air bubbles
Pre-heat the karai and add the cooking oil to prevent sticking. You could also use a wide metal ring to prevent the baking pan from touching the oil.
Place the baking pan on the ring and cover for about 45 minutes before checking if the cake is ready.
