The grilled salmon is an incredible dish that can be served with a variety of sauces. It can be taken with ugali or as a solo appetizer. The grill can be replaced by using an open shallow pan.

  1. Light charcoal in a grill and brush the grilling rack with oil to keep the salmon from sticking on it when cooking.
  2. As the grill heats, take a board and lay the side salmon down, cut it into strips in a crosswise way to 4 equal pieces.
  3. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl to make the marinade.
  4. Drizzle half of the marinade onto the salmon and allow it to sit for around 10 minutes as it absorbs the flavor of the marinade. (This can also be refrigerated overnight instead)
  5. Place the salmon skin-side-down on the hot grill and discard the marinade the fish was sitting in. Depending on how the fish is thick, grill for 4 to 5 mins.
  6. Turn carefully with a wide spatula, so that the pieces do not cut and grill for another 4 to 5 minutes.
  7. Transfer the fish to a flat plate, skin side down, and drizzle the remaining marinade on top.
  8. Allow the fish to rest for about 10 minutes, remove the skin and serve
