Pan-roasted potato wedges covered with infused rosemary and garlic oil. The one way you can enjoy some potato fries when you don't have a saice in the house. Itit is full of flavour and the rusty edges, give it a nice crust in the end. Try it.

  1. Wash the potatoes very well. You can use with skin on. Cut into half or big size cylinders. Boil then on a pot for 8mins. Remove from heat, get them off the water and set aside.
  2. On a saute pan, add 9 tbsps of oil, fry garlic and rosemary under medium-low heat. Mame sure not to burn. Allow enough time for oil to be infused until the grlic browns very well.
  3. Sieve the oil on the potatoes, add salt, pepper and chili and toss them. Don't worry when they break apart, they will still get roasted.
  4. On a saute pan, add the reminder of infused oil, if any. Pour some more oil if need be, 2 tsp is enough.
  5. Heat oil until it simmers, place the wedges and roast for upto 10mins.
  6. They should not overlap so a single layer at a time. Do them in batches until you are done.
  7. Then you are done. No sauce needed. You can wnjoy them with guacamole, or any dipping sauce you have.
