Pasta Fagioli is a soft sweet dish that is easy to cook and requires less time to prepare. It is best served around the company and cozy days.

  1. Set a large pot over medium-high heat and add some olive oil. Add the onion, carrot, celery and sauté until softened about 5 minutes. Go in with your garlic as you stir for about 2 mins. Stir in the bay leaves.
  2. Add the tomatoes vegetable broth, beans, and parmesan. Stir in the thyme, basil, rosemary, and crushed red pepper.
  3. Season with salt and black pepper. Allow to keep cooking on low heat for 15 mins.
  4. Stir in the pasta and turn up the heat to medium. This may take about 8-10 mins till the pasta is tender. Stir in the parsley, remove the bay leaves and parmesan rind.
  5. Ladle into bowls and serve with grated Parmesan cheese, if desired.
  6. Note for gluten-free use gluten-free pasta. Preferred to serve with crusty or garlic bread.
