Shakshuka is a must try dish. It involves cooking with most readily available ingredients in the kitchen. Its all in the seasoning and eating a bit runny or solid egg stew. I just had to get on this bandwagon.

  1. Heat oil in a lid skillet over medium heat. Stir fry onions, bell peppers and season with salt and pepper.
  2. When soft, go in with your garlic, coriander stalks and ground cumin and chili. Stir for 2 minutes.
  3. Now add in your tomatoes. Cook for 10 mins as you add water bit by bit to make a thick paste. Do not cover. Add a little sugar for the tomatoes. Always taste to adjust seasoning to your liking.
  4. It should be thick enough, with your spatula or wooden spoon, create 6 holes to create room for the eggs, just enough to get to the heat and cook. Carefully break your eggs in. Cover with lid and let it simmer over low heat for 8 mins.
  5. If you are to add in vegetables or meat, add when the onions are still cooking to make a whole meal.
  6. When done, spinkle cheese or yoghurt, coriander and sauce and serve with naan or any flat bread
