Spring rolls are thinly wrapped cylindrical pastry with vegetable and meat filling inside. Very popular appetizers from Italian cuisines. Make the filling creamy or cheesy to add to the flavor.

  1. PREPARE FILLING
  2. Get a bowl, add the chicken pieces. Go in with salt, black pepper, garlic, then mix them together, preferably with your hands, until the meat gets all the flavor. Marinate for about 45 mins.
  3. In a nonstick pan over heat, add the oil, as you carefully put the chicken pieces ( avoid laying them over each other). Let them cook as you turn the sides. Cover with a tight lid, under low heat, for 25 mins.
  4. Remove the meat from their bones to a bowl, be careful when it is hot. Set aside.
  5. In a pot, add your vegetable oil, carrots and cook for a few moments. Add cabbage, scallions/ green onions, red chilies, soy sauce, lemon juice. Saute` them all together for about 5 mins.
  6. Add in your chicken pieces and mix well. Your fillings are ready.
  7. SPRING ROLL WRAPPERS
  8. In a bowl, add the flour and salt, mix well. In the middle, add water then mix the solution thoroughly to make a fine dough. Shape round, cover completely with a cloth or foil for 15 mins.
  9. Take a board, sprinkle some little flour at the bottom. Form a long cylindrical rod to cut into balls of about 10. Take one ball at a time as you cover the rest...
  10. Sprinkle some flour at the bottom, to avoid sticking, roll and spread the ball till flat, about 1/2 cm thickness. Do this for all the balls. Lay them over each other as you spread the oil evenly and sprinkle some little flour in between them.
  11. Roll them together to form round 1 1/2 cm thick flat disc. Under medium heat, put the disc to heat, about 10 secs each side then remove.
  12. Separate the discs carefully from each other as you set them aside. These will be around 10 wrappers.
  13. SPRING ROLL
  14. Take one wrapper, add the fillings in the middle, fold to make a cylindrical pastry. Seal with wet hands as you wet the side of the wrappers with water.
  15. Shallow fry them on low heat on a saute pan. Turn them gradually, until they form a crunchy crust.
