This is stir-fried okra with sausage. Okra is some good vegetable that does so good with broths and any meaty option. We will do a stir fry version so you may decide to leave off its slimy texture.   1. Prepare your vegetables and set aside so we can get ready with cooking. In a bowl, mix your onions, garlic, pepper, scallions altogether because they will be cooked all at once.
  2. In a frying pan, heat a good amount of oil, then add in your cut vegetables. Fry as you stir on medium-low as it cooks for about 3 mins. Sprinkle some black pepper now as it cooks so flavour soaks in.
  3. Now we want our sausages fried, a bit crunchy on the edges and browned. Add in now and cook. Allow the sides to cook as you turn sides just so it doesn't burn. This should take about 4 mins.
  4. We go in with the okra. If it is boiled then it should take about 2 mins to stir fry together but when it is frozen, slightly more so it gets cooked. Stir as it cooks, season with salt.
  5. The time you leave on heat determines how crunchy your okra will taste. Cook for about 7-10mins so as to get the okra edges nice and browned. The sausage maybe a bit overcooked so you can decide not to leave the okra for long or not.
