This is an Italian dish. Stuffed calamari is well-prepared squid, boneless and skinless, very well cleaned then stuffed with a variety of meats or vegetables. You can do chicken meat, prawns, anchovies, rice, peas, and whatever you have available. With this recipe, prepare your available ingredients, should be raw because the calamari will be cooked through so you don't have to worry.

We will start with how to prepare your fresh squid in case you have them raw and untouched. Let's get to it.

  1. FOR THE RAW SQUID
  2. Have your fresh raw squid, remove the tentacles by cutting just above the eyes, and set the legs aside. (The eyes should not be included with the legs). On the legs, take out the mouth, it has a black spot and a bit bumpy, take it off so as not to include in the dish. Remove the backbone inside the squid, careful to not break inside, remove it all plus the eyes, and every other part. The black skin should be removed too and you should be left with a clean white, long squid. With the legs on the side.
  3. FOR THE STUFFING
  4. Prep your shrimp by removing the scales off, cut above, and remove a black lining from inside the shrimp, do this for the rest of the bunch. Place the shrimp in a blender, add in 4 cloves of garlic, parsley, 2 tbsp of olive oil then blend in. It shouldn't be too smooth or else we won't have anything to chew on our dish, add in squid wings and you can include the legs to give stuffing more body.
  5. GRILLING
  6. Stuff your fillings inside each squid. Press them till the bottom but not too much so as not to burst. With a toothpick, close the opening, about 2 insertions. Poke the body of the squid with a toothpick to give it air inside.
  7. Take a grill pan, add some olive oil, place your squids, and grill each side until browned. Poke with a toothpick as you check whether it is cooked. About 3 to 4 minutes, or when the body is hard. Remove when done.
  8. FINALLY IN THE SAUCE
  9. In a saucepan, fry 3 cloves of garlic and chilies until browned, add in tomatoes, squeeze shrimp heads to add the juice in the sauce as it cooks. (This gets all the juices from shrimp). It cooks for about 2 minutes then add in the stuffed squids. Cover and let it simmer for 8 to 10mins on low heat until cooked through.
  10. READY
  11. It is finally ready, you can serve it up with rice, spaghetti and with some vegetables on the side.
