Simple githeri mix. Just to add on the flavor, for the culture, add in some spring onion leaves and some avocado. Add flavors by adding meat and make a thick paste.

  1. In a large cooking pot, fry the onions until cooked (don't let them turn brown). Add the tomatoes, allow cooking for about min or two
  2. Add the garlic and ginger, let it cook for a min then add the green pepper, curry powder, beef stock (or warm water), salt and pepper, stir very well for about 2 mins.
  3. Add the potatoes, beans, and maize. Then add the mashed butternut, stir then cover to cook.
  4. Let it simmer for about 15-20 mins and check the potatoes to have cooked through. *You can add some meat to give it a meaty flavor
